Description
Palmetto Bluff is nestled along the May River in the Lowcountry of South Carolina between Hilton Head Island and Savannah. As an award winning 20,000 acre development, the development encompasses a private member’s only club which includes a marina, restaurants, an equestrian center, a shooting club, a Jack Nicklaus Signature Golf Course, The Crossroads Reversable King Collins Golf Course, Anson Point Golf Course designed by Coore and Crenshaw, a lawn and racquet club, a community farm, and more. In addition, Palmetto Bluff has an extensive nature preserve, walking trails, retail shopping, art gallery, and a vibrant village, all which pay homage to the region’s rich heritage.
Job Summary:
Responsible for adherence to service standards and day-to-day functions in the restaurant. Directs front-of-the-house restaurant staff to ensure smooth service and stimulate sales. Consistently conduct pre-shift meetings with all front and back-of-house employees. Interact with all guests and members to ensure highly personalized service. Active in all service operations, specifically, but not limited to presenting menus to guests, taking orders, answering the telephone, receiving reservation requests, managing reservations to meet business demands, serving and clearing food and beverages, greeting and seating guests, as well as recording and maintaining related schedules and information. Will cross-train in and, at times, support other Club Restaurants and Banquet/Catering operations as needed.
Essential Job Functions: Job duties include, although are not limited to:
Provides the highest quality service and product to satisfy both members and guests. Actively participates in the restaurant operation providing continuous direction to staff and ensuring maximum member/guest interaction. Communicate to all front-of-house and back-of-house staff all pertinent information, including, but not limited to, special events, policies and guidelines, human resource topics, and other related topics. Assures scheduled staff is present, knowledgeable of that day's duties, and performing their duties in accordance with established standards. Ensures equitable, timely, and complete opening and closing duties are accomplished. Knowledgeable of POS system to program specials and ensure database integrity. Supervises and maintains service standards and adherence to Palmetto Bluff Club Standards. Ensures shift-closing paperwork is timely, complete, and processed according to policy. Assist with the submittal of the weekly variable pay worksheets and gratuity distribution administration. Ensures the facility, equipment, and surrounding areas are well-maintained and clean. Continually provides member menu feedback to the culinary department. Assist the Restaurant Manager with payroll and labor controls to achieve budgeted goals. Maintains a daily operations log, including cover counts, staff levels, service issues, and other relevant topics for future reference. Oversee the ordering and maintaining par levels for beverages and other inventory. Attends weekly Food and Beverage meeting and other special event meetings. Maintain complete knowledge of: All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation, and prices. Restaurant and Bar layout, table/seat/station numbers, restaurant reservation process, proper table set-ups, room capacity, hours of operation, price range and dress code. P.O.S. and manual system procedures. Be knowledgeable in all Palmetto Bluff Club BEOs. Understand the characteristics and description of every wine/champagne by the glass and major wines on the wine list. Maintain designated china, flatware, and glassware for drinks. Qualifications: High school graduate. Minimum 21 years of age to serve alcoholic beverages. Two years of related hands-on experience (experience in a resort and/or club environment is beneficial). Excellent telephone etiquette. Strong knowledge of MS Office, including Word, Excel, PowerPoint, and Outlook. Physical Requirements:
Most work tasks are performed indoors. Must be able to lift 20 lbs. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening, and hearing ability and visual acuity. Talking and listening occur continuously while communicating with guests, supervisors, and subordinates. Vision occurs continuously, with the most common visual functions being near vision and depth perception. Requires manual dexterity to use and operate all necessary equipment. Must have finger dexterity to operate office equipment such as computers, printers, photocopiers, and other office equipment as needed.
