JOB TITLE: Head Chef (1 vacancy)
SALARY RANGE : $53,919.00 - $72,515.00 per week + allowance

REPORTS TO: The Household Manager
MANAGES : 1 Sous Chef
J OB PURPOSE
Under the direction of the Household Manager, the Head Chef is responsible for directing all food preparation activities in the Private Kitchen of the official residence of The Governor-General. The incumbent, plans a variety of menus according to the occasion and delivers delectable, appetizing dishes. He or she manages assigned staff in preparing and presenting dishes, and maintains a safe and sanitary work environment that conforms to the required health and safety standards. This role requires sound knowledge of foods, appropriate combinations, and food preparation and cooking techniques; plating and presentation techniques; health and safety standards; the management of a Pantry and pantry supplies; and, customer service.

KEY RESPONSIBILITY AREAS
Management/Administrative Responsibilities
Monitor Their Excellencies weekly, monthly and annual diaries in order to keep abreast of events that will require food and beverage.
Provide leadership and supervisory oversight for assigned staff to assure the prescribed courtesies, customer service standards, and protocol are observed, and the required procedures for tasks are executed in keeping with established standards.
Define and implement work schedules for all assigned staff.
Report all damages to items in the Private Kitchen in keeping with established procedures.
Prepare and submit for approval weekly menus in keeping with agreed timelines.
Maintain records of food type, volume/quantity, procurement and delivery dates as prescribed by established policies and procedures.
Technical/Professional Responsibilities
The Head Chef is responsible for directing all food preparation activities in the Private Kitchen of the official residence of The Governor-General, this includes but is not limited to the following:
In collaboration with Her Excellency and the Household Manager, develop menus and coordinate food & beverage preparation for all breakfasts, luncheons, dinners, cocktail parties and receptions directed from the Residence. Consult with the Household Manager to agree food production plan for events.
Plan and submit for approval weekly meal plan for Their Excellencies and guests with due attention to variety and rotation.
Develop standard recipes and techniques for food preparation and presentation.
Prepare or supervise the preparation of all meal courses and see to their timely delivery; all prepared food items leaving the kitchen must be approved by him or her and served on schedule. Provide information to Valet, Lady’s Maid and Butlers on menu and meal times for Their Excellencies and guests
Plate and/or oversee the plating of all food courses. Constantly evaluate food outputs to assure quality and presentation standards are consistently attained and maintained.
Monitor temperature control requirements for each type of food in keeping with established food safety standards.
Implement procedures to reduce and/or eliminate wastage. Establish portions to be used in each dish.
Maintain a repertoire of at least thirty dishes that may be used for the range of events directed from the Residence.
Train assigned staff and provide appropriate exposure so they are as proficient in preparing food items on approved, created and or modified menus.
In consultation with the Household Manager, prepare the required lists of food items and other supplies for procurement.
Establish optimal stocking quantities of food supplies. Manage pantry supplies in keeping with FIFO method and standard operating procedures. Prepare shopping lists.
Carry out periodic inventory inspection and count of supplies in all food storage areas.
Assess each food item that has been purchased; make sure that the best deal has been achieved in terms of quality and price. Prevent under and over buying of food items which will result in keeping cost low. Keep food from being spoiled or used past their due by date.
Direct the Cook in the portioning, labelling and storage of all food items. Monitor rotation of stored foods.
Develop a timetable and routine for deep cleaning of the kitchen to include tools, equipment and storage areas and monitor its implementation.
Maintain First Aid Kit assigned to the Kitchen. Report to the Household Manager all incidents of injury.
At the end of each shift/work day, check that all food preparation areas are appropriately sanitized, and kitchen tools, equipment and utensils are located in appropriate storage areas.
Report malfunction of tools and equipment or maintenance deficiencies to the Household Manager.
Report damage to tools, equipment, linens and other articles that occur while in your care.
Accompany Their Excellencies on trips and provide food and beverage service as required.
Perform other related duties as required.
Departmental Human Resource Responsibilities
Assess training needs and recommend training interventions for assigned staff in keeping with operational objectives. Provide on-going coaching for staff and conduct training sessions as required to meet identified needs.
Carry out performance evaluation processes for assigned staff.
Conduct job specific orientation for new staff.
Other Responsibilities
Is a working member of any related Committee.
PERFORMANCE MEASURES
Legal and ethical guidelines with respect to food handling procedures, standards of sanitation, storage, health and safety are implemented and met as they relate to the kitchen, its personnel, food and beverage preparation and storage.
The expectation of Their Excellencies, their guests and visitors are consistently achieved and exceeded with respect to quality and variety of meals served and delivered.
Weekly Work Plan for assigned staff submitted within required timeline and tasks monitored.
Inventory/pantry supplies kept at optimal stocking levels. All food storage areas kept in impeccable condition.
Kitchen tools, equipment and utensils are appropriately maintained.
Report of malfunction of tools and equipment and/or damage to tools, equipment, linen and other articles submitted within established timelines.
The standards of customer service, personal presentation, efficiencies and cleanliness are upheld and or exceeded.
REQUIRED KNOWLEDGE SPECIFIC TO THE POSITION
Sound, in-depth knowledge of foods, appropriate combination of foods and cooking techniques.
Knowledge of food plating and presentation techniques.
Knowledge of food portion and cost calculations, quality control and production control of menus.
Knowledge of appropriate food storage and labelling techniques.
Knowledge of Public Health Policies, procedures and HAACP standards
Knowledge of the operation and care of kitchen tools, equipment and utensils
Knowledge of appropriate use and storage of chemicals used in food preparation and sanitation.
Understanding of inventory management and food rotation procedures.
MINIMUM REQUIRED EDUCATION AND EXPERIENCE
An Undergraduate Degree in Food Service Management with specialization in food and beverage management or related discipline from a recognized tertiary institution.
Certification in General Catering.
At least five (5) years progressive experience in food preparation operations within the hotel industry or related field.
Supervisory training and experience.
Valid Food Handler’s Permit.
SPECIAL CONDITIONS ASSOCIATED WITH THE JOB
The Head Chef is expected to lead by example and take a non-traditional approach to working hours. This means that he or she may be required to work a flexible schedule which will include at times long hours, work on weekends and Public Holidays.
This position demands good physical and mental health. It requires solving problems that arise, spending long hours on one’s feet and often having to lift heavy objects.
JOB TITLE: Landscaper/Grounds Man (12 vacancies)
JOB GRADE: LMO/TS 2
SALARY RANGE : $18,647.00 - $25,078.00 per week
JOB PURPOSE
Under the supervision of the Landscape/Grounds Supervisor, the Grounds Man is responsible for landscaping and maintaining the King’s House grounds to provide a pleasing backdrop for State, National and Civic ceremonies, Meetings, Visits, Tours and other events and activities undertaken by the Office. The areas include the outer and inner entrance ways to King’s House, inner roadways, Teardrop Garden, The Governor-General’s Garden, Ceremonial Garden, Hardwood Garden, Banyan Lawn, Ceremonial Lawn, West Lawn, Office areas and adjoining Car Parks, and East Pastures.
The Grounds Man assists with the assigned preparation required for special events and functions at King’s House. The incumbent is expected to be consistent in projecting a professional image as well as upholding high standards of service delivery.
This role requires technical knowledge of landscaping structures; landscape design; ornamental plants; ground cover; plant care and pest control procedures; and, the operation of landscaping tools and equipment.

Technical/Professional Responsibilities
Cuts and or resuscitates lawns, prunes of shrubs and trees, prepares garden beds and introduces new plants.

Uses hand and power tools such as power saw, brush cutter, shears and edge clippers to maintain the grounds. Carries out minor repairs of such equipment and tools.
Transplants shrubs and other plants using best practices to ensure proper horticultural care.
Weeds areas of landscape, planter boxes, and maintains the greenhouse.
Mulches, sprays, forks, trims edges, waters and prunes shrubs, trees, flowerbeds and potted plants as necessary to ensure the health.
Maintains the assigned areas according to the work schedule implemented by the Supervisor.
Provides support for the installation of landscape designs for all areas of the property.
Maintains borders and footpaths clear and free from litter at all times while undertaking general cleaning of the grounds by sweeping, raking, washing down areas, etc.
Reports to the Supervisor on any faulty or damaged equipment or any potential hazard or untoward occurrences within the property.
Performs any other related duties as required.
MINIMUM REQUIRED EDUCATION AND EXPERIENCE
Certificate in horticulture, landscaping, agriculture or related discipline from a recognized tertiary institution. Certification by HEART/NTA desirable.
At least two (2) years related experience in a comparable setting.

JOB TITLE: Farmer/Grounds Man (2 vacancies)

JOB PURPOSE
Under the supervision of the Farm Manager, the Grounds Man/Farm is responsible for ensuring that all assigned areas of the farm at King’s House are maintained to the highest standards.
The Grounds Man/Farm is responsible for handling a variety of tasks involved in farming operation such as growing and harvesting grains, fruits, vegetables, nuts, and other crops. He or she plants, seeds, prunes, irrigates, harvests, packs and loads crops for disbursement and/or sale.
This role requires technical knowledge of agricultural production; crop rotation; harvesting procedures; food quality standards; and the operation of farming tools and equipment.
KEY RESPONSIBILITY AREAS
Technical/Professional Responsibilities
Adheres to agreed work plan and ensures cropping operations including cultivating, seeding and applying appropriate fertiliser rates for all crops is completed within established timelines.
Adheres to harvesting plan for fruit trees across the property to ensure productivity and prevent losses.
Weeds farmland, prepares area for cultivation, and maintains the greenhouse.
Transplants trees, shrubs and other plants using best practices and manual methods or by using power-operated equipment.
Ensures the health of plants and crops by mulching, fertilizing, spraying, forking, digging, edging, watering, and pruning as necessary.
Engages in soil conservation activities such as tree-planting and monitors composite site to support organic plant production.
Ensures farm activities and complies with Government regulations.
Maintains borders and footpaths clear and free from litter at all times. Checks and maintains water systems.
Follows basic instructions in the use of chemicals, fertilizers, safety procedures and methodology.
Operates agricultural power equipment such as zero turn lawn mowers, tractors with bush hog.
Carries out minor servicing and maintenance of such equipment and tools to include periodic oil checks.
Reports to the supervisor on any faulty or damaged equipment or any potential hazard as well as any untoward occurrences on the property.
MINIMUM REQUIRED EDUCATION AND EXPERIENCE
Certificate in General Agriculture, Horticulture and Turf Management or related discipline from a recognized tertiary institution. Certification by HEART/NTA is desirable.
At least two (2) years related working experience in a comparable setting.
Experience operating agricultural tools and equipment.
JOB TITLE: Cleaner/Office Attendant (2 vacancies)

SALARY RANGE : $18,647.00 - $25,078.00 per week
JOB PURPOSE
Under the supervision of the House Supervisor, the Cleaner/Office Attendant provides high quality cleaning service. The incumbent is responsible for maintaining the cleanliness of the General Administration Building and the Staff Canteen of the Office of His Excellency The Governor-General and Staff (“ the Office” ).
The incumbent projects a professional and upholds the Office’s high standards of service delivery, which is considered vital and deserving to visitors, stakeholders and Staff. This person will clean offices, restrooms, corridors, stairways, offices, and the dining area and kitchen of the Staff Canteen. This position involves constant customer interaction.
KEY OUTPUTS
Specified areas are cleaned according to agreed standards.
Regular, consistent attendance, personal appearance, punctuality, and adherence to prescribed standards is maintained.
Tasks are completed within the time agreed.

Implements normal household duties to keep the workplace clean. These duties include sweeping floors, cleaning walls and windows, and emptying garbage receptacles.
Dusts and cleans offices, desks, chairs, windows, doors, office equipment, and stairways.
Removes cobweb and dust from walls and ceilings when necessary.
Wipes door facings, baseboards and walls. Keeps floor all surfaces clean and sanitized.
Mixes water and detergents or acids in containers to prepare cleaning solutions, according to specifications.
Cleans restrooms and replenishes supplies.
Carries out detailed cleaning according to work schedule.
Collects cleaning supplies from the Stores as needed.
Performs any other duties that may be assigned from time to time.
REQUIRED KNOWLEDGE SPECIFIC TO THE POSITION
Knowledge of cleaning equipment including domestic vacuum cleaners and steam machines.
Firm grasp of which types of cleaning chemicals are to be used for each job and how to prevent toxic combinations.

JOB PURPOSE
Under the direction of the Head Butler, the Butler is responsible for the provision of food and beverage service to Their Excellencies, family, and guests. The Butler also provides support for housekeeping tasks and preparations for Their Excellencies travel.
The Butler is formally trained, and supports the Head Butler in delivering his or her roles and responsibilities which include preparing for state visits, official functions, formal dinners and cocktail parties; ensuring that the utmost attention is paid to all the various aspects of output. He or she also assists with packing and travel preparations for Their Excellencies.

Technical/Professional Responsibilities
Keep abreast of activities on Their Excellencies weekly, monthly and annual diaries to ensure optimal response time and preparedness for activities/events that will require food and/or beverage service.
Coordinate with Head Butler for the timely delivery of meal service for Their Excellencies and guests. Assist with the preparation of items as required.
Responsible for table settings in the residence and for events as required. Carry out effective cleaning of fine china, silverware, crystal and related food service items in the residence.
Provide superior wait service to Their Excellencies and guests for the range of events and activities undertaken (e.g. Courtesy Calls, Meetings, Teas, and other events as required). Set beverage/tea stations as required.
Observe safety and sanitation requirements in keeping with Standard Operating Procedures.
Carry out housekeeping tasks as required in keeping with Standard Operating Procedures.
Assist with packing and movement of luggage for Their Excellencies travel as required.
Assist with the movement of guests and their luggage as required. Respond to their requests as required.

Establish portions to be used in each dish.</li>\n<li>Maintain a repertoire of at least thirty dishes that may be used for the range of events directed from the Residence.</li>\n<li>Train assigned staff and provide appropriate exposure so they are as proficient in preparing food items on approved, created and or modified menus.</li>\n<li>In consultation with the Household Manager, prepare the required lists of food items and other supplies for procurement.</li>\n<li>Establish optimal stocking quantities of food supplies. Manage pantry supplies in keeping with FIFO method and standard operating procedures. Prepare shopping lists.</li>\n<li>Carry out periodic inventory inspection and count of supplies in all food storage areas.</li>\n<li>Assess each food item that has been purchased; make sure that the best deal has been achieved in terms of quality and price. Prevent under and over buying of food items which will result in keeping cost low. Keep food from being spoiled or used past their due by date.</li>\n<li>Direct the Cook in the portioning, labelling and storage of all food items. Monitor rotation of stored foods.</li>\n<li>Develop a timetable and routine for deep cleaning of the kitchen to include tools, equipment and storage areas and monitor its implementation.</li>\n<li>Maintain First Aid Kit assigned to the Kitchen.
