Description
The Brasserie is an award-winning 80-seat fine dining restaurant on Grand Cayman with a fantastic reputation for its farm-to-table cuisine. Adjoining the restaurant is an upscale bistro-style market and coffee shop, an outdoor juice bar, and a quick, casual open-air BBQ joint. Brasserie Purveyors is an innovative distributor focusing on specialty beverages such as fine wines and small batch spirits, supplying our outlets and discerning clientele.
The Lead Kitchen will provide supervisory support to the Head Chef and serve as the primary contact for the kitchen helper staff at the Brasserie. This role also serves as a communication "hub" for the BOH/ Kitchen department, ensuring information flows to and from the Head Chef, Sous Chefs, Jr. Sous Chefs, and the rest of the culinary team.
Responsibilities include, but are not limited to:
Report to immediate supervisor
Responsible for the supervision of the kitchen helper team
Assign duties to your team
Responsible for ensuring the kitchen and your station are clean and sanitized at all times
Ensure that cleaning and safety procedures are followed
Ensure that pots, pans, plates, and other kitchen equipment and utensils are washed and stored properly
Ensure back areas and appliances are well maintained and cleaned at all times (fridge, coolers, etc).
Maintain a clean uniform and immaculate personal presentation at all times.
Assist with the preparation of food as instructed by your Chefs
Manage time well, work efficiently, know how to prioritize.
Attend to Market customers in a friendly and professional manner when needed
Maintain a positive “can do” attitude at all times
Be a cohesive, energetic team leader
Other related duties that may be assigned to you from time to time.
