Schedule: Early Morning, Weekday and Weekend Shifts | Occasional Overtime About Hissho Sushi: At Hissho, we’re passionate about making premium sushi accessible everywhere — from grocery stores to hospitals to airports. Our vertically integrated supply chain, industry-leading innovation, and focus on quality ensure that every roll reflects the artistry and care of our brand. What You’ll Do: As a Sushi Cook, you’ll prepare and assemble fresh sushi products in our shared production facility. You’ll work with both automated and manual sushi-making equipment to help deliver consistent, high-quality products every day. Responsibilities include: Preparing sushi rice, seafood, and vegetables following Hissho’s standardized recipes. Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified Rolling and cutting sushi using Suzumo automated machines. Following batch sheets and production targets for accuracy and efficiency. Packaging and labeling finished trays using BOHA terminals. Maintaining strict food safety and sanitation standards (HACCP/GMP). Assisting with daily setup, cleaning, and equipment sanitation. Supporting continuous improvement and process consistency across the team.
