Overview
Job Summary
The 1st legger is the process of removing the hide from the lower round, hock and leg of the carcass. The 1st legger is responsible for removing hide starting from the pattern mark on the round, inserting knife between the hide and the bottom round of the carcass and carefully skin hide from around the hock and through the lower leg.
Key Responsibilities:
Use knife to cut pattern from midline of hind hock to rump on first leg.
With clean hand, hold hide with hand to hold the hide tight while performing job.
Use knife to skin inside of hind leg, cut from inside of hide out.
If the knife cuts through the hide or comes out of the pattern a sanitation dip of the knife is required.
Steel knife and then place knife into sterilizer after each carcass.
NOTE: this description is not intended to be all inclusive. An employee may perform other related duties to meet the ongoing needs of the organization; these duties are considered marginal.
Qualifications
Minimum Qualifications (Required):
Must be 18 years of age or older.
Must be able to work in the United States without sponsorship.
Must be able to work in a humid, hot, wet, slippery, or moving surface at varied heights in and around moving equipment and parts with the use of personal protective equipment (PPE).
Preferred Qualifications:
Previous experience/knowledge of manufacturing environment.
Previous heavy machinery experience in manufacturing environment.
Previous agriculture production/ beef plant experience.
Knowledge, Skills, and Abilities:
Be attentive to detail.
Ability to work safely, wear PPE, and follow instructions.
Ability to attend work consistently.
Always be aware of your surroundings.
Follow all safety, food safety, and Sanitary dress procedures.
Able to stand for lengthy periods of time.
Display strong work ethic.
