Job Summary :
The overall purpose of the Cook/Assistant Chef position is to ensure that Patient meals are properly prepared/cooked and apportioned according to authorized menus in a timely manner. This position ensures all meals are prepared in a sanitized environment and in accordance with local, state, and federal guidelines and regulations.
Qualifications
Qualifications:
Current state Food Manager Certificate.
Experience in quality food preparation and production in either long-term care or healthcare setting is preferred.
Ability to read, write, and speak the English language.
Essential Functions:
Prepares or directs preparation of food items on assigned/scheduled menus.
Adheres to food production and usage schedules and avoids waste.
Appropriately and immediately labels, dates, and stores food items/leftovers after use.
Maintains sanitation of equipment and utensils, all work, and storage areas by cleaning immediately after use.
Prepares or directs preparation of special items, meals, and snacks.
Prepares special snacks and supplements as instructed by Nutrition Services Director/Chef and identifies with patient name, room number, date, and time.
Identifies and corrects safety hazards in food service areas.
Assists in establishment and maintenance of perpetual supplies inventory and notifies Nutrition Services Director of shortages or discrepancies.
Complies with established policy, practices, and standards for food preparation.
Log and records temperatures of food, refrigerators, freezers, and dispensers as appropriate.
May assist in the training, orientation and supervision of newly hired Nutrition Services staff when assigned as a PIE (Partner in Excellence).
Instruct and supervise workers in maintenance and care of equipment in absence of the Nutrition Services Director/Chef.
Orient and instruct new employees in regulations and policies in conjunction with the Nutrition Services Director.
Determine that food is prepared and served on trays as attractively as possible and that the flavor and temperature are correct (check trays as they leave department).
Assist in standardization of recipes to meet menu needs.
Maintain portion control of foods served.
Assist in checking food supplies on food order forms as they arrive from vendors.
As needed, unpack and store food and supplies as they arrive.
Maintain orderly and correct storage of all food items, dry storage, freezer storage, and refrigerator storage.
Prepare tray cards in the absence of the Nutrition Services Director/Chef/Ticket Aide.
Ability to function as a Team Leader/Role Model.
Has reviewed Cantex Continuing Care Network Clinical Policies and Procedures for Abuse Prevention and knows the employees responsibility to enforce it.
Attends weekly in-services, understands, and complies with Patient Care Management Systems.
Responsible for assuring patient/resident safety.
Performs other duties and tasks as assigned.

margin-right:0in; text-align:justify\"> </p>\n\n<h1 style=\"margin-left:0in; margin-right:0in; text-align:justify\"><span style=\"font-family:Arial,Helvetica,sans-serif\"><u>Essential Functions:</u></span></h1>\n\n<ul>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Prepares or directs preparation of food items on assigned/scheduled menus. </span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Adheres to food production and usage schedules and avoids waste.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Appropriately and immediately labels, dates, and stores food items/leftovers after use.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Maintains sanitation of equipment and utensils, all work, and storage areas by cleaning immediately after use.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Prepares or directs preparation of special items, meals, and snacks.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Prepares special snacks and supplements as instructed by Nutrition Services Director/Chef and identifies with patient name, room number, date, and time.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Identifies and corrects safety hazards in food service areas.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Assists in establishment and maintenance of perpetual supplies inventory and notifies Nutrition Services Director of shortages or discrepancies.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Complies with established policy, practices, and standards for food preparation.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Log and records temperatures of food, refrigerators, freezers, and dispensers as appropriate.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">May assist in the training, orientation and supervision of newly hired Nutrition Services staff when assigned as a PIE (Partner in Excellence).</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Instruct and supervise workers in maintenance and care of equipment in absence of the Nutrition Services Director/Chef.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Orient and instruct new employees in regulations and policies in conjunction with the Nutrition Services Director.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Determine that food is prepared and served on trays as attractively as possible and that the flavor and temperature are correct (check trays as they leave department).</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Assist in standardization of recipes to meet menu needs.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Maintain portion control of foods served.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Assist in checking food supplies on food order forms as they arrive from vendors.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">As needed, unpack and store food and supplies as they arrive.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Maintain orderly and correct storage of all food items, dry storage, freezer storage, and refrigerator storage.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Prepare tray cards in the absence of the Nutrition Services Director/Chef/Ticket Aide.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Ability to function as a Team Leader/Role Model.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Has reviewed Cantex Continuing Care Network Clinical Policies and Procedures for Abuse Prevention and knows the employees responsibility to enforce it.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Attends weekly in-services, understands, and complies with Patient Care Management Systems.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Responsible for assuring patient/resident safety.</span></li>\n\t<li><span style=\"font-family:Arial,Helvetica,sans-serif\">Performs other duties and tasks as assigned.</span></li>\n</ul>\n\n<p>#LP </p>\n\n<p><span style=\"font-family:Arial,Helvetica,sans-serif\"><span style=\"background-color:#ffffff\"><strong><em><span style=\"color:#595959\">We are an Equal opportunity employer;
