Description We are looking for an experienced Sous Chef with strong leadership skills and deep knowledge of Indochinese cuisine, modern plating , and fine-dining kitchen operations. The Sous Chef will oversee daily culinary operations at 3 Merchants, drive menu development, ensure consistency and excellence in every dish, and support the team in delivering a memorable and innovative dining experience. A little taste of your day-to-day: Every day is different, but you’ll mostly be: About 3 Merchants 3 Merchants is the signature fine-dining restaurant of Crowne Plaza Vientiane, offering a bold and modern interpretation of Indochinese cuisine. Our culinary direction blends the flavours of Laos, Vietnam, Cambodia, Thailand, and Myanmar with refined techniques, premium ingredients, and a strong tasting-menu culture . We are now seeking a talented and passionate Sous Chef to join and lead our kitchen. Key Responsibilities Culinary Leadership Lead and supervise the 3 Merchants kitchen team in all daily operations. Ensure all dishes are executed with precision, creativity, and refined presentation. Maintain and elevate the culinary identity of 3 Merchants through strong knowledge of Indochinese flavours. Menu Development & Creativity Work closely with the Executive Chef for Crowne Plaza to create seasonal tasting menus, signature dishes, and special event menus. Introduce innovative techniques and modern interpretations of regional flavours. Operational Excellence Ensure kitchen cleanliness, hygiene, and food safety standards are rigorously maintained. Manage mise-en-place, inventory, and ordering to ensure efficiency and cost control. Maintain consistency in taste, portioning, and presentation. Team Training & Development Train junior chefs in techniques, recipes, and service execution. Motivate the team, maintain discipline, and encourage growth within the kitchen. Collaboration & Communication Work closely with F&B service teams to ensure smooth coordination during service. Participate in menu tastings, promotional events, and photo shoots when required. includes site inspection, What We need from you: Experience as Sous Chef or Junior Sous Chef in a fine-dining environment.
