Description

Job Summary: Bourbon & Bones – Square One Concepts is seeking a reliable and efficient Sushi cook to join the team. The ideal candidate will have a passion for creating exceptional dishes using high-quality ingredients and precise cooking techniques. This position requires someone who is detail-oriented, organized, and able to work in a fast-paced environment. Duties/Responsibilities/Sushi preparation and technique: Hand-rolls, nigiri, sashimi, and specialty Nigiri variations with exact fish-to-rice balance. Skillful knife work (slicing, filleting, and portioning) to optimize texture and flavor. Source and inspect fish and seafood for freshness; manage inventory, rotation, and proper storage. Maintain pristine station setup, tools, and mise en place for lunch and dinner services. Execute meticulous plating that reflects the restaurant’s aesthetic and seasonal themes. Communicate clearly with chefs, servers, and sommeliers to ensure a seamless dining experience. Build and plate all rolls, nigiri, and sashimi to established recipe specifications and presentation standards on every cover. Maintain consistent speed and output during high-volume service without sacrificing quality or plating integrity. Follow all recipes, portioning guidelines, and visual presentation standards to ensure uniformity across every dish. Proficiency in sushi rice production, fish breakdown, and portioning, nigiri assembly, and maki/specialty roll construction. Ability to work efficiently and accurately in a fast-paced, high-volume kitchen environment Strong organizational skills with the ability to manage and maintain a clean, structured station throughout service.
