Job Title: KOA Kitchen Lead
Department: KOA Campground
Status: Seasonal
Reports To: Campground General Manager
Job Summary
The Kitchen Lead Cook is responsible for preparing, packaging, and presenting Big Sky Backcountry’s grab‑and‑go and made‑to‑order food offerings while leading daily kitchen operations. This role ensures consistency, food safety, efficiency, and quality across a menu that serves guests quickly and reliably in an outdoor‑focused, seasonal environment.
Key Responsibilities
Food Preparation & Production
Prepare and cook menu items. Execute menu items according to approved recipes, portion standards, and quality expectations Prepare grab‑and‑go items for efficient guest service Ensure food is properly packaged, labeled, dated, and stored Maintain appropriate prep levels to meet daily demand Kitchen Leadership
Lead and work alongside kitchen staff during prep and service Assign daily tasks and manage workflow efficiency Train staff on menu execution, food handling, prep techniques, and equipment use Set expectations for cleanliness, organization, and teamwork All other duties as assigned Food Safety & Sanitation
Ensure compliance with all food safety, sanitation, and health department regulations Monitor hot and cold holding temperatures Enforce FIFO food rotation and expiration controls Maintain a clean and organized kitchen, prep area, and storage spaces Inventory & Waste Control
Assist with tracking food inventory and ordering supplies Control portions and minimize food waste Communicate low inventory levels and equipment issues to management Guest Experience & Operations
Support fast, friendly, and consistent food service Utilize POS system to process customer orders Respond professionally to guest questions or food‑related concerns Qualifications & Skills
Previous cooking experience required; lead or supervisory experience preferred Experience with breakfast items, sandwiches, pizza, or quick‑service menus preferred Knowledge of food safety and sanitation best practices Strong organization, time‑management, and leadership skills Ability to work efficiently in a fast‑paced, seasonal environment Ability to stand for extended periods and lift up to 40 lbs Work Environment
Seasonal, high‑volume hospitality kitchen Early mornings, weekends, and holidays required Physically active role with fluctuating demand
