Description
DESCRIPTION: In light of the CSJ Mission, Charism, Generous Promises and Our Sacred Work, the Cook Is responsible for preparing, seasoning and cooking food for residents, employees and guests as planned by the Center Dietary Director. The Cook arranges cooking schedule so foods will be ready at specified time conferring with the Dietary Director when needed.
ESSENTIAL FUNCTIONS:
Handles and prepares food in accordance with sanitary regulations. Ensures that standardized recipes are followed, nutritional requirements are met, and food is palatable and appetizing in appearance. Plans cooking schedule for meeting mealtimes. Tests cooked food by taste and smell to determine if properly cooked and seasoned. Avoids food waste. Follows production order, menus and records hot food temperatures, (over/under). Cleans work area including appliances; this is completed after every meal. Completes routine cleaning tasks per cleaning schedules or as directed. Maintains sanitary and safe working environment. Assists with special events pertinent to Dietary department’s operations. Checks and records temperature on all refrigerators daily. Notifies Dietary Director of items needing to be restocked. Maintains stock in all storage areas, observing expiration dates and first in-first out inventory usage. Other duties as assigned. SKILLS AND ABILITIES:
Must be able to cook a variety of foods in large quantities and be able to make simple estimates relative to quantities of food required. Must be familiar with seasoning required and cooking time involved is necessary. Must have knowledge of various types of dishes and understand the weights and measurements as it relates to food. Ability to handle and use kitchen equipment and utensils. Must be able to read, follow and carry out instructions, including operating manuals for appliances, recipes and safety procedures, etc. Ability to work as a team player, learning routines and carrying out responsibilities so that dining times and food service operations run smoothly. Display ability to use tact and courtesy when working with residents and personnel; exhibits ability to supervise and work cooperatively with others. Demonstrate ability to communicate in a pleasant and professional manner with supervisors, residents, employees and guests. Display ability to relate well and communicate effectively with the elderly and understand the individual dignity of residents, employees and guests. EDUCATION AND EXPERIENCE:
High School diploma or equivalent. 3 years of hands-on experience in a commercial kitchen or dietary department desirable. Formal food service or culinary training desirable. Serve Safe certification desirable. PHYSICAL ACTIVITY REQUIREMENTS:
Stands and walks short distances most of working day; stoops, reaches, lifts and carries equipment and supplies. Bends, lifts, carries, pushes and handles items when performing cleaning duties; reaches above the shoulders. Ability to lift objects weighing 40 pounds. May be exposed to extreme temperatures when going into the freezer and/or when operating the oven.
Hours for the position are 10:00 a.m. to 6:30 p.m. some weekends required
