Join our St. Louis production leadership team and help oversee one of the fastest-growing names in fresh, ready-to-eat foods. What You’ll Do As a Production Manager, you’ll oversee all daily manufacturing operations within our commissary - including sushi production, packaging, labelling, and outbound order staging. You’ll ensure safety, consistency, and efficiency across shifts while upholding the highest standards of food safety and quality. This position requires active floor leadership and strong communication between prep, production, and delivery. Responsibilities: Lead daily production operations and oversight of prep, roll assembly, cutting, packaging, and labeling per Hissho’s procedures. Supervise team members to meet quality, yield, and efficiency goals. Maintain and verify all production documentation - including rice pH, temperature, and sanitation logs. Ensure compliance with FDA, Seafood HACCP, and GMP requirements. Conduct daily food safety checks and support facility sanitation procedures. Track inventory levels of raw materials and finished goods; communicate needs to leadership. Support continuous improvement efforts around throughput, waste reduction, and process consistency. Monitor production schedules, batch sheets, and order fulfillment accuracy. Oversee packaging, sorting, and staging of finished products for timely delivery.
